Baked Salmon with Baked Potato

Extra Virgin Olive Oil

Butter

2 pieces of Salmon

2 Potatoes

Fresh Garlic (minced)

Lemon (thin slices and halved)

Preparation & Baking Instructions

Fresh minced garlic and sliced lemon add an extra depth of flavor to this savory dish. Serve with a side salad and dressing of your choice to complete this meal.

Tip: Preheat oven to 400 degrees Fahrenheit, and start baking potatoes 50 minutes before Salmon, then bake Salmon until it reaches an internal temperature of 145 degrees Fahrenheit.

  1. Puncture potatoes with a fork, place each on a piece of foil, drizzle olive oil on potato and season to taste with HappyZest, Saltus, and Taiono, wrap potatoes in foil and place on cookie sheet and place in oven for 50 minutes.
  1. Mince fresh garlic, slice lemon and cut it into halves.
  1. Sear Salmon (both sides) on stove top in a pan with a large drizzle of olive oil, place in oven ready pan, baste with melted butter, use DesertMont as a dry rub covering all sides of Salmon, season to taste with HappyZest and Saltus, add minced garlic to top of Salmon, place sliced lemons on top of Salmon, cover pan with foil and bake in oven for 20 minutes.

Once the internal temperature of 145 degrees Fahrenheit is reached place on plate and serve.

Definitions:

  • Baste – poor or brush melted butter onto Salmon
  • Sear – quickly cook the surface of both sides of the salmon at high heat. This keeps the juices inside the meat while it is cooking.
